How Sébastien and Céline's Story Began

So, if it weren’t for our shared passion for wine, we never would have crossed paths in 2009 while working at Clos Henri Vineyard in the Marlborough wine region of New Zealand. There, we handcrafted Sauvignon Blanc and Pinot Noir together. After spending two years in New Zealand, we set off to explore wine regions around the world. In 2011, we worked at DeBartoli in the Yarra Valley of Australia, making Pinot Noir, Chardonnay, Merlot, and Cabernet Sauvignon.

Around this time, we both had separate opportunities to travel to the United States. Sébastien became a winemaker for Dr. Konstantin Frank in New York’s Finger Lakes region, while Céline took on the role of U.S. brand ambassador for the prestigious French winemaker Michel Chapoutier. Not long after arriving, we decided to build our dream right here in the Finger Lakes, inspired by the exceptional wine quality we were discovering.

Between us, we’ve worked 23 vintages across France, Australia, New Zealand, and the United States. Our approach to winemaking blends old-world traditions with new-world techniques to bring out the fullest expression of the Finger Lakes terroir. We believe good wine starts in the vineyard, so we travel extensively around the Finger Lakes seeking out the best terroirs and grapes, staying close to the vineyard during the growing season. As harvest approaches, we taste regularly—every two or three days. Unlike most winemakers, we don’t measure Brix or acidity levels; we rely solely on taste to inform our picking decisions.

Meet Sébastien, Carrying His Family Legacy

« I’m originally from Champagne, where my family has been handcrafting wine and growing grapes for six generations. I spent six years studying viticulture and enology in Champagne, and then I did a year of sales and marketing in wine and spirits in Reims. My passion for wine and the Master OIV MSC diploma took me on a journey around the world. In just one year, I visited 32 countries, connecting with wine producers and oenophiles everywhere I went!

After spending nine vintages in Champagne, I wanted to see how others were making wine. So, I set out to explore other parts of France and regions around the world. I worked a vintage in Saint-Émilion (Bordeaux), one in Languedoc-Roussillon (Maury), one in Marlborough (New Zealand), and one in Yarra Valley (Australia). Eventually, my desire to learn brought me to the Finger Lakes, where I quickly connected with the terroirs and the community. »

Meet Céline, our passionate wine enthusiast from southwest France

« I’m originally from the Toulouse region in the southwest of France and grew up around my grandparents’ vineyard in the foothills of the Pyrénées. From 2002 until 2005, I took sommelier classes and graduated with a degree in Hospitality and Tourism from the University of Toulouse. Those few years of sommelier classes enriched my love for wine, and I decided to turn that passion into my career. I started working for a French winery called Le Cellier des Templiers in Languedoc-Roussillon.

In 2009, I met Sébastien in New Zealand at the beautiful Clos Henri Vineyard, where we worked together for almost two years. Our journey in the wine world continued, and we ended up in Australia for the 2011 vintage, handcrafting wine for DeBortoli Wines. After that, I spent almost two years as the US Brand Ambassador for M. Chapoutier, the world-renowned winemaker and producer of the finest Rhône Valley appellations. »
